Zucchini, Potato and Onion Frittata

2 Yukon gold potatoes, boiled and mashed, seasoned with salt and pepper

2 small zucchinis peeled and chopped

1 small or ½ large Vidalia onion chopped

8 extra large eggs

½ cup cream (optional)

1 cup shredded mozzarella cheese (optional)

Olive oil

Adobo seasoning

 

Preheat over to 375 degrees

In a large bowl beat eggs and cream. Add cooled mashed potatoes and incorporate well. Add cheese and mix

In a 10-inch ovenproof non-stick skillet heat olive oil and sauté zucchini and onions. While cooking, season with Adobo. Cook until soft, about 8-10 minutes. Add egg mixture and stir to combine.

Bake until set, about 15-20 minutes
