Zucchini and Summer Squash Vegetable Soup

This soup makes a great side to any protein. You can add chopped clams or other seafood for a mock Manhattan Chowder. Add sliced cooked sausage or shredded cooked chicken breast for a warm and hearty meal.

2 -3 zucchini (peeling is optional but my wife does peel zucchini & squash)

2 -3 summer squash (peeling is optional)

5 - 6 carrots

(The above depend on size)

2 celery stalks

3 cloves of garlic - chopped

1 onion - diced

1 can flavored diced tomatoes

vegetable broth

TBS olive oil

  • Cut zucchini and squash length wise, then cut into 1-inch chunks. Don’t cut too small or they will disintegrate.
  • Peel carrots and celery and cut into 1-inch pieces
  • In a large stockpot add olive oil and sauté onion and garlic 2 -3 minutes
  • Add all cut vegetables and canned tomatoes
  • Cover vegetable mixture with vegetable stock and simmer uncovered until carrots are soft (30 + minutes).
