Zucchini and Cheese Frittata

This can be made in advance and reheated in microwave along with breakfast meat for a quick high protein breakfast.


3 small zucchinis peeled & chopped

1 small bunch green onion / scallion, chopped

10 eggs (omega-3, free range recommended)

¾ cups shredded sharp cheese (any cheese is fine)

2 TBS cream

Salt and pepper

1TBS butter and 1 TBS olive oil



  • Heat oven to 350°
  • Heat butter and oil in 10-inch non-stick oven safe skillet
  • Sauté green onion and zucchini and cook until tender. Salt and pepper to taste
  • In the mean time crack eggs in large mixing bowl and mix well. Add cheese and cream and mix.
  • Once zucchini is soft add egg mixture to pan and cook until bottom is set. You can fold eggs in from the sides of the pan to allow for more of the egg mixture to cook.
  • Place skillet in oven and cook for 20 minutes or until top is just set, being careful not to over cook.


Transfer to glass pie plate.  Serve with bacon, ham or breakfast sausage.

Makes 4 servings
