Simple Shrimp Ceviche

1 lb boiled shrimp (shrimp cocktail) – cut into ½ inch pieces

1 cucumber – seeded and diced

1-cup salsa (I use Green Mountain brand)

½ cup cocktail / seafood sauce (I use Trader Joe’s brand)

1 ripe avocado – diced

2 TBS extra virgin olive oil

1 TBS Cholula or hot sauce

Sea salt and fresh ground black pepper to taste


In a large bowl combine shrimp, diced cucumber, olive oil, salt and pepper. Toss to coat shrimp and cucumber. Add salsa, cocktail sauce and hot sauce. Toss. Top with diced avocado and gently fold together. Serve with mixed green salad.
