Sausage and Green Beans

This is a great one-pot meal with tons of flavor. Enough to feed four or save for leftovers.

 

6 sweet or hot Italian pork sausage, casing removed or 1 lb sausage meat

1 lb fresh green beans

2 onions (sliced)

3 red peppers (sliced)

2 cans (14.5 oz) diced tomatoes (I used some kind of flavored tomatoes)

Olive oil

  • Heat oven to 400°
  • In 5-6 quart cast iron pot or ovenproof sauce pot brown sausage meat. Transfer to bowl.
  • Add 1 TBS olive oil to pot along with onions and peppers. Season with salt and fresh ground pepper. Cook 3-4 minutes or until vegetables are soft.
  • Add the 2 cans of tomatoes. Reduce heat and simmer 7-8 minutes
  • Add trimmed green beans to tomato / vegetable mixture and cook 3 minutes
  • Add cooked sausage and mix thoroughly.
  • Cover and place pot in oven. Bake 35-40 minutes or until green beans are tender.
