Paleo Pancakes

This recipe is taken from “The Paleo Solution”. I highly recommend this book for its nutritional information on our ancestral diet. The way of eating outlined will do wonders for many medical conditions and allergies. I have been following this plan with the inclusion of some dairy. All my stomach discomforts have disappeared, I am enjoying a great variety of food and most importantly feel better than I can every remember! 

2 eggs

½ cup unsweetened applesauce

½ nut butter (Not peanut butter. Macadamia / cashew work well. I use Trader Joes almond butter w/roasted flaxseed)

¼ tsp cinnamon

¼ tsp vanilla

coconut oil

  • Mix all ingredients except coconut oil in a bowl. Stir well until you have a uniform batter.
  • Place a bit on coconut oil in non-stick skillet and heat over low-med heat.
  • Spread some batter into skillet to form a pancake
  • Cook 1-2 minutes and flip. Be careful not to burn them.

Once you’ve cooked the pancakes you can top with fruit or real maple syrup. I think they taste great plain. Batter stays well in the refrigerator for a few days.
