No Bake Vanilla Protein Bars

Cooking spray

1+1/2 cups dry oatmeal (quick cook)

2 scoops (1/2 cup) vanilla protein powder 

2 Tablespoons flaxseed meal

1-cup nonfat powdered milk

½ cup all natural peanut butter or almond butter

2/3 cup water 

½ cup dry cherries or craisins  

1-teaspoon vanilla

¼ cup unsweetened coconut flakes

  1. Lightly spray an 8 x 8 glass-baking dish with cooking spray
  2. Chop raisins / cherries with knife or in food processor
  3. In a large bowl mix oatmeal, protein powder, flaxseed meal and powdered milk
  4. Mix in dried fruit and coconut
  5. In a separate bowl whisk together nut butter, water and vanilla. Add wet mixture to dry ingredients. Spray hand with cooking spray (or wet with water) and kneed thoroughly to form a sticky dough. (Add more water if needed)
  6. Spread the mixture evenly into prepared baking dish.
  7. Refrigerate overnight.
  8. Cut into 9 squares. Wrap individually and store in refrigerator.

Each square is about 200 calories.
