Fish Al' Pomodoro

1 pound fish (snapper, haddock, scrod, etc) - cut into about four fillets

2 cloves of garlic, sliced

1 – 14 oz. can diced flavored tomatoes (basil, oregano, garlic, etc.)

2 tablespoons olive oil

¼ cup white wine

10 pitted olives, halved

fresh (or dry) parsley, chopped

¼ teaspoon kosher salt

¼ spoon black pepper

¼ teaspoon red pepper

  1. In a large skillet add oil, garlic and parsley. Cook 3 minutes, being careful not to burn garlic.
  2. Add can of diced tomatoes, salt, peppers, olives and wine. Bring to a boil and let simmer about 10 minutes or slightly reduced.
  3. Add fish. Cover and simmer about 10 minutes or until fished is cooked.

Serve with green vegetable.
