Breakfast Hash with Eggs

I make this flavorful hash in advance and enjoy for breakfast. It also makes a great lunch or dinner as well, with or without the eggs. You can be sitting down to a complete meal in under 5 minutes. Who says a hot breakfast takes too long to prepare!

  • 1 pound ground beef or bison (grass fed recommended)
  • 2 cans (14.5) diced tomatoes, drained (I use Green Chile flavored tomatoes)
  • 1 med/large sweet onion
  • 1 TBS onion powder
  • 1 TBS garlic power
  • 1 TBS olive or coconut oil

In non-stick skillet sauté onions in oil about 3-4 minutes

Add ground meat and brown, breaking apart with wooded spoon

Add tomatoes, onion / garlic power

Simmer about 10 minutes. Taste after 2-3 minutes of simmering and re-season if necessary.


Let cool and place in plastic container. Refrigerate.

When ready to eat, place hash in shallow bowl and microwave about 1 minute.

In the meantime fry 2-3 eggs (free range, omega-3) in olive or coconut oil.

Slide eggs atop hash and serve with green vegetable.
